Avoid Temptation Risotto

1 on Extra Easy at 11am. Hopefully this is where it will remain.

We're about to embark on "Party Sunday". I'm hoping I can retain a little self control and not launch into the party food. We have a toddler bash at 2pm (as in a party for Toddlers, not toddlers bashing each other - that is obviously very very wrong).

There are going to be 13 little uns going nuts for the bouncy castle and eating sausage rolls and birthday cake.

When we finish at 5pm we jump in the car and speed down the motorway to make it to Great-Great-Aunts bash at 19.30 (as in a party for a great great aunt not....oh you get the picture).

I'm determined to have a very healthy weigh in on Wednesday so I have made a vat of "Avoid-Temptation-Risotto" which I will keep about my person and snack on throughout the day. I know the picture doesn't make it look very appealing but it does taste good -even cold - and it's hearty enough that it will fill me up all day.

Along with a huge breakfast and a couple of Alpen Light bars secreted in my bag I should be able to make it through the day without succumbing.

I'll try to update whether I succeeded or failed before I pass out in bed at the end of the night.


WHAT WENT INTO IT FOR 1 PERSON:

  • Gallo pronto Risotto

  • 1 Joe's sausage (left over from breakfast)

  • 1 piece of chicken (left over from yesterdays roast dinner)

  • Bail leaves

HOW I DID IT:

  • Cook risotto as per pack instructions

  • Add chicken and sausage and basil

Saturday Roast

Tomorrow is a busy day as we are going to two parties. Get us and our hectic social whirl!

The first is The Trolls' best friends 4th birthday party. There will be a bouncy castle, face painting and cake. The second is Great-Great-Aunt's surprise 60th birthday party. There will be a bar, buffet food and dancing.

If I can ignore bar, buffet & cake and stick to the bouncy castle and dancing (and possibly face painting) I can make this week on the scales a good one. I'm taking a tub of tuna pasta which should help me avoid the cold pizza slices and black forest gateau.

This means our Sunday roast has been pulled back a day. Ha! We laugh in the face of British tradition! Bring on the roast tatties and gravy!!

WHAT WENT INTO IT FOR 3 PEOPLE:
  • 3 chicken breasts
  • Leek, sweet peppers, potatoes roasted in fry light
  • Peas and sweetcorn
  • 142ml Gravy (2.5 SYNS) made with garlic and balsamic vinegar

HOW I MADE IT:
  • Roasted the chicken with garlic and slices of lemon
  • Par boiled potatoes for 7 minutes then roasted with leek, sweet peppers for 30 mins in fry light
  • Boiled peas and sweetcorn for 5 minutes
  • Gravy made with garlic and balsamic, ingrediants all combined and simmered for 20minutes

Chinese - the Take Away That Makes the Slimming World Go Round

I've done this a little bit late, but I've decided to make a record of my body measurements, hopefully I'll see them reducing..

I'm ashamed to report the following:

  • Upper arm: 14.5inches
  • Chest (around boobies): 45 inches
  • Chest (under boobies): 42 inches
  • Waist (?? Can I call it that?): 43 inches
  • Hips and belly apron: 50 inches
  • Thigh: 26.5 inches
  • Size 18 on top
  • Size 20 on bottom
Those are some very unsexy numbers. I wanted to try and find a website that would let me enter my measurements and it would present me with a picture of a body with the same measurements. The closest I could get is this:

I entered my height and weight and this is how I look apparently. I have to say they have been very generous. Where are my bingo wings? Where is my back fat? Why aren't my thighs touching?

I also did some googling for images of 50 inch waists. The results were so not cool. This weight has to go. I feel sad now,
I need a piggy blow out. Piggy blow-out can be achieved within syn allowance with a "Chinese - the Take Away That Makes the Slimming World Go Round".

WHAT WENT INTO IT FOR 1 PERSON:
  • 495g Chicken chow mein (9 SYNS)
  • 200g Beef and mushroom (3 SYNS)
  • Boiled Rice
  • Soy sauce

Mummy Blubber's Stupidly Massive Turkey Salad

I'm rigid about weighing in spot on at 9am. Back in May I weighed in at 05.30am and hadn't lost an ounce. I weighed again at 9am and had lost 2lbs. That's the weight that I entered in my online weight-loss journal.

In the interest of experimentation, yesterday I decided to see what a difference a day makes and weighed myself as often as I could remember.

So apparently I can lose/gain around half a stone a day! I'm sticking to my 9am weigh in. Strangely it's the one I seem to weigh less at? I wonder if the power of my mind forced an extra p
ound off?

It's worth noting that the bathroom scales make me half a stone slimmer than my Wii ones. I do my weekly weigh in on the Wii ones as I'm pretty realistic and I think they are probably in the right - much as I would love to believe the bathroom ones.....

"Mummy Blubber's Stupidly Massive Turkey Salad" for one tonight as my Chunky Lover had a big lunch.

WHAT WENT INTO IT FOR 1 PERSON:
  • Turkey steaks fried in Sylvia's Rib Rub n More
  • Salad, tomatoes, peppers, red onion
  • Roasted new potatoes in garlic and sea salt
  • 8 olives (1 SYN)
HOW I DID IT:
  • Just mix all the above together!

Tesco Finest Restaurant Collection Chicken with Chorizo and Manchego

Wednesday weigh in and it's another 1lb off. Even though this is great considering I had a day off plan on Friday, I still feel a bit disappointed because my body feels as though I have lost a lot more than that. I should have measured myself at the start - maybe it's inches that have changed this week.

Anyway, more importantly than anything else I have now lost 10% of my original weight.

To work this out, divide 100 by your original start weight in lbs, then multiply the result by the number of pounds you have lost so far.

So, I weighed 228lbs to start and have lost 23lbs so far:
100/228 = 0.44
0.44 x 23 = 10%

A quick check of the Slimming World website tells me that losing 10% of your original weight has the following benefits:
  • Lowers cholesterol and blood pressure
  • Reduces risk of heart attack and diabetes
  • Reduces strain on joints
  • Improves asthma.
Well, I had severe pelvic pain during and after pregnancy, and I don't feel that any more and I haven't needed my inhaler for weeks - so I guess it's working already for me!

At 18.30 I developed a huge migraine with aura - odd as haven't had a surplus of sweetner? So my Chunky Lover cooked dinner: "Tesco Finest Restaurant Collection Chicken with Chorizo and Manchego Cheese".

WHAT WENT INTO IT FOR TWO PEOPLE:
  • Tesco Finest Restaurant Collection Chicken with Chorizo and Manchego (3.5 SYNS PER SERVING)
  • Roasted new potatoes
  • Asparagus and broccoli
HOW I DID IT:
  • Cook chicken as per pack instructions
  • Par boil potatoes for 7 minutes, then roast in preheated oven (gm9) for 45 minutes with sea salt and garlic
  • Boil asparagus for 3 minutes

Lemony Swordfish Fettucine

The theme of this week's cooking is convenience. Throughout my maternity leave (six months so far) I have been very careful about not giving myself appointments that I must adhere to, so everything has pretty much been baby led. If she is fed and happy then we can go out. It's made for a very relaxed and happy maternity leave so far.

However this week The Troll has been booked in for a crash course in swimming and we have to be at the pool for 11am every day. Getting the girls fed, dressed, bags packed, and ready to leave the house has to be organised with military precision. Even though I start getting prepared the night before, from 8am I don't stop until we are out the door at 10.20.

It didn't help yesterday that The Troll deliberately wet herself just before we left. There's something about being in a swimming costume that makes her think she can wee where she stands. (On holiday we took her to the paddling pool, which had clean toilets in clear view and we even pointed them out to her. 15 minutes later in the middle of the pool she called over to me sat at the side 'LOOK AT ME, I'M WEEING!!!!'. Most of the other mums were not amused......)

The longshot of this is that I don't want any meals this week that involve loads of prep in the afternoon. "Lemony Swordfish Fettucine" was chosen with this in mind. This and the fact that Tesco actually had some swordfish in this week.

WHAT WENT INTO IT FOR TWO PEOPLE:
  • 250g fettuccine
  • 1 tbsp grated lemon rind
  • 1 clove garlic crushed
  • 1 tsp lazy chilli
  • 2 tbsp lemon thyme leaves
  • 300g swordfish cubed
  • 1 lemon sliced
  • Black pepper
  • 1/2 tbsp Grated parmesan (0.75 SYNS)
HOW I DID IT:
  • Cook the pasta as per packet instructions, drain and keep warm
  • Meanwhile heat frylighted pan and fry lemon rind, garlic, chilli and thyme - for 3 mins.
  • Add the swordfish and continue to fry for 3 minutes until golden and tender.
  • Add lemon slices - fry for 2 mins until golden,
  • Toss swordfish and spice mix through fettucine
  • Top with parmesan and black pepper

Tart au Citron

After some careful deliberation I have decided that
I weigh just over 34lbs there.

Actually no, that's a bit too skinny. I'm going to Uranus (*suppresses giggles*) because I weigh my interim target weight there.

Today (still on Earth) I ate TWO salads which is quite impressive for me. I find the perfect salad has more meat, egg, olives and potatoes than salad veg. Which is exactly how these two were made. You could barely see any lettuce even though there was a fair amount of it on my plate.

Then for afters I made the BEST Slimming World dessert I have come across yet: "Tart au Citron". The topping really does come as close to cheesecake as I think it might be possible to get. The base was lemony and light. I'm going to have another right now. (and try not to worry about the artificial sweetner).

WHAT WENT INTO THEM:

Base

  • 57g couscous (but I should have used a bit less - maybe 47g?)

  • 75ml boiling water

  • 2tsp lemon juice & a little lemon rind

  • 1tbsp granulated low calorie sweetener

  • Fry Light

Filling

  • 1 egg & 1 egg yolk, beaten together

  • 57g Quark

  • 1 x 200gm Mullerlight vanilla yoghurt

  • juice and rind of a lemon

  • 3tbsp granulated low calorie sweetener

  • 1tsp icing sugar (1 SYN)

HOW I DID IT:

  • Pre-heat the oven to Gas 3.

  • Soaking the couscous in boiling water for 5 minutes

  • Add the lemon juice, rind and sweetener and stir well.

  • Press into 2 presentation rings sprayed with Fry Light and cook for 10 minutes.

  • Whilst cooking, mix all the filling ingredients together

  • Pour into the rings on top of the base.

  • Cook for about 30 minutes or until set.

  • Leave to cool then chill (still in the rings) for at least 2 hours.

  • Remove from the ringand dust 0.5tsp of icing sugar over each tart before serving.
