Sea food Spaghetti

Had a lovely day with Granny and Grandpa (The Trolls and Squirky's Great Granny and Grandpa), and as I predicted - despite me asking them not to - they laid out iced party rings, sandwiches, peanut butter on toast, battenburg cake, shed loads of tea and choccie biccies. I declined everything and stuck to my filling pasta bake.

I did let the Troll have whatever she wanted. It makes my grandparents so happy to spoil her and we see them so rarely. The Troll must have eaten an entire packet of party rings. That's me girl!

I didn't feel denied though. I really don't like either battenburg or party rings and I had tonight's dinner to look forward to - a classic marinara.

WHAT WENT INTO DINNER FOR TWO:

  • Tesco Raw Fruit de Mer (400g) - I picked out the mussels
  • Frylight
  • 125ml water
  • 1/2 onion chopped
  • 2 cloves of garlic chopped
  • 1 400g tin of tomatoes
  • 1 tbsp tomato puree (0.25 SYNS PER SERVING)
  • 85mls White wine (1.5 SYNS PER SERVING)
  • 1 tsp brown sugar (0.5 SYNS PER SERVING)
  • 1/2tsp lemon rind grated
  • 1tbsp chopped fresh basil
  • 150g spaghetti
  • Parmesan (HEALTHY A OPTION)

HOW I DID IT:

  • Fry onion in frylight for 5 mins
  • Add sauce ingredients: garlic, tin chopped tomatoes, tomato puree, wine, sugar, lemon rind, half the basil, and water
  • Simmer for one hour and stir it every now and then
  • Season
  • Add seafood mix and cook for 10 more minutes
  • Make spaghetti as per pack instructions
  • Combine with sauce and top with parmesan and basil

Hawaiian Pizza Pasta Bake - Again

We took Squirky and the Troll swimming today. Although we were messing about with them and not doing laps or anything we have still ended up physically shattered. What is it about being in a pool that leaves you starving and tired?!

We're heading to Grandma's and Grandpa's tomorrow. They'll have scones, tea cakes, malt loaf and other grandparenty things on offer, so I phoned ahead and asked them please not to go to any trouble and we'll bring our own.

I really loved the Hawaiian Pizza Pasta Bake I made a couple of weeks ago and it travels well, so made a stash to eat for dinner tonight and half left over to take tomorrow.

I'm off to collapse.

    WHAT WENT INTO DINNER FOR ONE (WITH LEFTOVERS TO TAKE WITH ME ON A DAY TRIP TOMORROW):

    • Packet of lean bacon
    • 200g pasta twirls
    • Passata
    • Red onion
    • Red pepper
    • Lazy garlic
    • Balsamic
    • Garlic lover shaker
    • Cherry tomatoes
    • 30g mozzarella (PART OF HEALTHY A OPTION)
    • 200g pineapple (2 SYNS PER SERVING)

    HOW I DID IT:

    • Boil pasta and take off heat 5 minutes before pack instructions
    • Fry garlic, pepper and onion until brown
    • Add and brown bacon
    • Add passata, splash of balsamic and a sprinkle of garlic lovers shake
    • Add pineapple and cherry tomatoes
    • Bring to boil and then allow to simmer
    • Put pasta in overproof dish and top with sauce
    • Cover in foil and bake for 30 mins
    • Remove foil, add cheese and bake for further 10 mins
BREAKFAST: BANANA, 2 CUPS OF TEA WITH DASHES OF MILK (1 SYN); LUNCH: BAKED POTATOE, TUNA, MAYO (0.5 SYNS), 12g MOZZERELLA (PART OF HEALTHY A CHOICE); DINNER: "HAWAIIAN PIZZA PASTA BAKE- AGAIN";SNACKS:

Cowboy Breakfast

The Troll is getting a little bit better with her bedtime routine. She still doesn't go to sleep immediately but she doesn't try and sneak back into the front room. Instead she wanders between her bedroom and ours and ends up in one of the two beds.

She really keeps herself busy, like a little worker ant, she carries hoards of toys and random objects between the rooms. I have found my switch card poking out from under the bathroom rug, a hanky laid lovingly over her sister 'to keep her warm' and the best bit is discovering what she has left under my duvet for me. Usually there are at least 5 teddy bears, 3 fridge magnets and her slippers, and then there is always a random object including to date: bongos, a shuttlecock, a purse and a football.

My Chunky Lover cooked tonight (a whole weekend of not cooking - love it!) and he made a family fave using Chill sausages from Joe's Sausages, "Cowboy's Breakfast".

WHAT WENT INTO IT FOR TWO PEOPLE:
  • Pack of Joe's sausages
  • 5 potatoes, diced
  • Baked beans
  • Cheese (HEALTHY A OPTION)
HOW I DID IT:
  • Par boiled potatoes and roast in fry light for 30 mins
  • Grill sausages
  • Put sausages on top of potatoes and top with baked beans
  • Put in over for 5 minutes
  • Top with grated cheese and put back in over for further 5 minutes
  • Serve with 1 tbsp very low fat mayo (0.5 SYNS)

My Usual Chinese

Oh what a day of absolute luxury.
My Chunky Lover got up with Squirky when she woke at 5am. I slept on till 9am!

Then he took the Troll to the park and whilst Squirky looked on from the safety of her baby walker I managed 45 minutes on the Wii, and then a shower, dyed my hair and shaved my legs! I feel like a woman of leisure.

And it doesn't stop there.

After lunch I hopped on a bus to get my hair cut and to mooch about the shops.

Last Christmas work gave us a voucher of our choice. We could chose from a selection including go-karting, wine tasting, photo shoot etc, and I picked a haircut, knowing that on maternity leave the money would run out and I'd be desperate at some point to look less like Wurzel Gummidge. I have reached the Gummidge point and I'm redeeming the voucher.

When I googled the salon to find out where it was located, google threw back a tonne of results with the word SCAM in them. Turns out this salon has been credited in the past with withholding the deposit you put down when making the appointment, giving bad careless cuts, and trying to get the customer to sign up to photoshoot following the cut costing hundreds of pounds.

My expectations were really low, so I was really pleased to find my stylist listened to what I wanted, made some suggestions and the cut came out really well. No hard sell and a head massage!

Coming home I phoned my exhausted Chunky Lover who ordered a Chinese for us, which I consumed in front of X Factor.

Such bliss!

WHAT I CHOSE:
  • Chicken chow mein (9 SYNS)
  • Boiled rice
  • Soy sauce

Crumby Chicken and Chunky Chips

Quite often, if I let slip how much I weigh to a friend they will look amazed and say 'You really don't look like you weigh that much!'.

I either have very wonderful friends who are great actors, or I have one of those pus filled football sized cysts that you alway read about in Take A Break magazine....

It's my second favourite day dream after thinking about winning the lottery - finding out my weight is medical and not cake related.

Today I used up the last £20 of Cafe Rouge vouchers by taking a friend to lunch. It was a very different ordering experience compared to the weekend. This time I had a salmon salad (grilled and no dressing) and a diet coke. I'm still going to assign my full 15 syns to today just in case there was a hidden naughtiness in there somewhere.

I finished the day with a pseudo takeaway - a low fat version of KFC chicken which is often talked about on the Facebook support forums.

WHAT WENT INTO IT FOR TWO:
  • Tesco mini chicken fillets
  • 2 wholemeal rolls (HEALTHY B CHOICE), blended to bits
  • Garlic lovers shaker
  • Egg, beaten
  • Chicken bovril
  • Potatoes
  • Spaghetti hoops
HOW I DID IT:
  • Dunk chicken in bovril - lightly (the first time I used too much and the taste was a bit too salty/strong)
  • Dunk in beaten egg
  • Mix crumbs with seasoning
  • Dunk chicken in crumbs - you won't use whole amount and don't be tempted to tip the remaining ones on the top - just use enough to cover otherwise the crumbs come out soggy!
  • Bake in over for 30 mins
  • Serve with Slimming World chips and spaghetti hoops

Basiled Chicken Linguine

Two things happened yesterday that have made my desire to change my body shape even stronger.

First of all, this exchanged occurred as I babysat for my neighbours 6 year old son last night.

6 yr Old: 'I want to be a policeman'

Mummy Blubber: 'You'd make a great policeman. Your mummy said you're a great runner, and you'll need to do lot's of running to catch the burglars'

6 yr Old: 'Yes, you can't be a policeman because you need to be fit to run, and you're quite fat. Probably because it's because you have babies, and babies push your tummy out, that's why you're so fat'

Out of the mouths of babes....

So after he went to bed I put on 'How to Look Good Naked', and there's this gorgeous woman, a mum of one, bemoaning the fact she now has a belly and oh my god she was stunning and I would kill for her body. The body she was in tears over! When they showed the shots of wobbling bellies and bums to prove they come in all shapes and sizes there wasn't one that looked as huge as mine. I'm too fat even for Gok to fix!

So I'm approaching Thursday with renewed vigour. 45 mins on the Wii and 100% on plan. Bye bye blubber!

Dinner and lunch are both repeat recipes and the links to recipes in my food diary.
I managed 3 months without repeating a whole days meals. This astounds me because when I did the diet in previous years I'd end up eating the same tried and tested meals over and over! It seems there is more variety possible than I previously thought!

Sun and Moon Soup

It's a sign of a modern couple isn't it that my Chunky Lover and I managed to have a row by text and MSN yesterday? And it's a sign of a tired couple isn't it that we were rowing about the lack of Milton Sterilising Tablets in Tesco. We made up again via MSN - cue a set of smiley face and heart emoticons. 5 years ago, when Milton tablets weren't even a blip on our radar we used to have the time to row face to face. Oh how life changes....

In other disheartening news...it's Wednesday weigh in - the result is bad. Very bad.

So to recap, I went vaguely over my syn allowance on Friday, majorly on Saturday, stupidly on Sunday and insanely on Monday.

And I thought maybe a 3 or 4lb gain was in order.

But I put six pounds on. SIX POUNDS!!! In four days!!! Eeeek.

Well never mind. It's done now. I'm ful
ly back on plan and hopefully (fingers tightly crossed) I'll see a chunk of that drop off next week.

And so to cheer up the house I made a sunny coloured cheerful 'Sun & Moon Soup', which has a garlic potato moon in the middle, surrounded by a butter nut squash sun. Ahhhh, smiley again!

WHAT WENT INTO SOUP FOR ONE OVER A FEW DAYS:

  • 2pts chicken stock
  • 1 tsp turmeric
  • Peeled and deseeded butternut squash
  • 400g peeled potatoes
  • Garlic bulb
  • Seasoning

HOW I DID IT:

  • Cut butternut into chunks and roast with seasoning and frylight, alongside the unpeeled garlic cloves covered in tinfoil for 30mins
  • Boil the potatoes
  • When roasted blend the butternut and turmeric and add the stock, put to one side
  • Blend potatoes, garlic and add remaining stock
  • Simmer both soups separately
  • To serve, place a presentation ring in the centre of the bowl, poor potato soup into ring and butternet outside so both soups are at same level, then remove ring

Garlicy Lamb and The Prettiest Damn Salad I Ever Done Saw

And I'm back!

I took 5 days off plan, and after just one day back on it, I feel better already! Honestly. I got up and did my 45 minutes on the Wii and have been drinking water all day and I already feel less sluggish.

Not that I regret taking the odd break from the Slimming World plan. I have a few more coming up in the next few weeks as it is both the Troll's and my Chunky Lover's birthdays.

My weight loss aim for September is to achieve my 2 stone loss, even if by the end of the month it has gone back on again. I just want that little celebration.

Last week I was half a pound away, but that was before I had 5 days of going well over my syn allowance.....the damage will be revealed in tomorrows weigh in!

My first meal back on plan is so so so so so pretty!
It's "Garlicy Lamb and The Prettiest Damn Salad I Ever Done Saw"

I ordered a range of petals from Steenbergs Organic, inspired by the pretty salads I always seem to see on Master Chef.

WHAT WENT INTO DINNER FOR TWO:

  • Lamb steaks in garlic lovers shaker
  • Potatoes cubed and roasted in frylight
  • Roasted cherry tomatoes
  • Lettuce leaves
  • Peonies, jasmine, cornflowers, orange blossom

HOW I DID IT:

  • Marinaded lamb in Tesco's garlic lovers shaker
  • Fried in frylight
  • Par boiled cubed potatoes and roasted with tomatoes for 30 mins
  • Arranged salad and sprinkled with flower petals
  • Added a tbsp of extra light mayo (0.5 SYNS)

Playing Truant - The Final Throes

The Monday before last I had a little cleaning spree which involved taking everything off the pin board in the kitchen and chucking out all the old dentist appointment cards, deciding whether to keep certain postcards for sentimental reasons and chuckling at funny things we'd clipped out of the paper.

The best find was lurking behind our daily planner calendar. £90 worth of Cafe Rouge vouchers that we had exchanged our Tesco clubcard reward vouchers for back in February. They are due to expire at the end of August.

First of all we thought we'd use them the following Sunday when we had guests from Brighton. But then the family was struck with the dreaded lurgy and we had to cancel.

Then we thought we'd use them this Sunday after we'd dropped the Troll at The In-Laws from Heaven, but we ate so much Sunday lunch we couldn't face eating out. And so we used them on Monday night instead. Myself and my Chunky Lover managed £50 on a bread plate, 2 starters and 2 mains. We couldn't face pudding. Yes you heard that right ....... I couldn't face pudding....


I'm REALLY REALLY REALLY looking forward to getting back on plan tomorrow.
