Spaghetti Carbonara

Chunky Lover and I took the girls to London Zoo today. A huge waste of time. We took longer getting there and back than we did actually exploring it. Squirky slept through most of it and The Troll was so underwhelmed that it bordered on funny.

"Look a camel!" I would call (genuinely excited - camels look mad up close), "Pffff, boring" The Troll would reply. Same response to the penguins, lions and gorillas. The only animal that came close to igniting her interest were the giraffes, but they were playing silly buggers by going in their shed when we were outside, and outside when we were in.

And the ultimate injustice? £8.50 for fish and chips! We stuck to chips, a more reasonable £2.50. (Making it £6 for the fish??????)

Home now, safe and sound, no more animals (or outrageously priced fish).

Korma and Naan

Wednesday weigh in....and I lost 1lb. Lost? LOST? Is there some Patron Saint of Fatties looking over me? How could I have possibly lost?

There have been so many weeks in the past where I have been in tears because I stuck to the plan 100%, have exercised and felt fab and yet lost NOTHING!

So how comes this week I barely stick to plan this week, and sit around on my lardy butt and still loose?

Bodies are strange strange things. I'll accept my pound off with a massive grin and prepare for gain next week.

My monthly stats are as shocking. I weighed 14stone 4 on the 1st of September. I've had at least 7 days off plan this month and I leave this month still at 14 stone 4. Not a pound lost or gained.

Praise be.

Today I had another day off today and two more planned before Sunday. Maybe this'll make me loose another pound next week?! Ha ha ha!

Chicken, Bacon & Chorizo Rice

Last night I ate 4 Muller Light yoghurts in a row whilst watching Britains Next Top Model. I needed something sweet to take my mind off the fact that my Chunky Lover had invested in a family sized tub of Cadburys Roses and was making fine progress in getting through all the good ones, i.e. any of the ones without the word 'creme' in the name.

I toyed with having just one - (I think they are about 2.5 or 3 syns each?) but I knew one would not be enough and that I could wait until my next day off plan (Wednesday). If my Chunky Lover has left any for me.......

Tonight's dinner was inspired by
'Food from the Sun' by Neven Maguire but with some Mummy Blubber tweaks to keep it low in syns and use up some leftovers!

WHAT WENT INTO IT FOR TWO:
  • 175g basmati and wild rice
  • Left over chicken peices
  • Left over smoked bacon
  • 56g chorizo (2.5 SYNS PER SERVING)
  • 1 onion
  • 2 garlic cloves
  • 75ml white wine (2 SYNS PER SERVING)
  • 300ml stock made with chicken bovril

HOW I DID IT:
  • Brown chicken and bacon in frylight, and set aside
  • Soften garlic and onion in frylight
  • Add rice and chorizo and stir through until combined
  • Add wine and stock
  • Put chicken back in
  • Bake in oven for 50mins at gas mark 4

Haddock, Wilted Spinach and Haricot Bean Mash

We are trying to get The Troll out of bed time nappies. She's dry in the day and we've been telling her when she turns four she'll be too old for nappies at night. She turned 4 last Thursday and the first night she was dry all night, the last two nights we haven't been so lucky.

Last night we put her to bed in her Dora the Explorer pyjamas and an hour later I saw the hallway light go on. 'Good girl' I thought, 'She's off to the loo'. I went to observe. I found her in the kitchen dressed in a summer t-shirt (nothing on her bottom half) and pink sandals on the wrong feet. Her hand was wedged in the left over birthday cake. I stare at her......'I'm just checking everything is okay, mummy'.

My Chunky Lover has a week off work and we planned some day trips. Monday was booked as London Zoo and Pizza Express (Thank you Tesco reward vouchers!!!), but Chunky has come down with a cold and we're postponing. With nothing else booked I'm reverted back to a Slimming World day. That's right! For one day only: I'M BACK!!!

And I'm
trying yet another recipe from 'Food from the Sun' by Neven Maguire. It is basically roasted Tesco Finest Haddock, on top of pureed haricot beans (in a tin from Tesco), red onion and garlic, served with garlic butter wilted spinach, and some roasted tomatoes on the side. It is topped with a smoked bacon, lemon juice and basil dressing. It uses a HEALTHY B CHOICE for the Extra Virgin Olive Oil, and 4 SYNS per portion for butter. I think I need to track Neven down and marry him. He can be my cooking husband. I'll have Matt from X Factor as my singing husband. And Chunky can stick around too. I like him a lot also.

Fatty Spag Bol

After I posted last night I realised that if I had not been blogging about my diet this is the point I would have crashed and not returned to plan until all the weight had gone back on. I don't go to Image Therapy as I follow the plan online but forums like iVillage, minimins and Facebook are my support network. After I posted I received a message from Jen on iVillage that reduced me to tears and convinced me that this would not be the end of my journey.

I sat down with my recipe books and planned out another 15 new meals to trial starting in 7 days time and knew the Tesco delivery planned for Sunday morning would let me eat SW breakfasts and dinners, but I would allow myself lunches as I wished until the blues passed.

But..(and there is always a but), when Tesco delivered my shopping this morning they gave me lean mince instead of extra lean mince, and this spelt the end of any plans I had for most of my main meals fitting with the SW plan.

I'm going to let myself to wallow in self pity and syns for the rest of the week, then grow the *&%! up and get back on plan. This is my promise to Jen!

P.S. I've noticed the formatting on my blog has gone doolally. In the preview it looks fine but after publishing it goes crazy. I'll underline my syns and HEX's from now on as the colour orange just isn't showing up.

Good Old Cowboys Breakfast

Squirky ate quite well yesterday, not as much as I want her too, but better than normal. She also stayed up a bit later in the evening. I hoped this would mean she'd sleep better through the night.

Of course not. A feed at 01:00 and up for good at 03.45. I call this the middle of the night. Chunky lover took over at 6am and I got 2 more hours sleep before dashing The Troll off to ballet. I hadn't washed or eaten and I'm sure the other wonder-mum's could tell.

To say I'm exhausted doesn't do justice too the swells of nausea I am feeling, or the numbness in my head. And I know - I really do appreciate - that I'm one of the lucky ones. Chunky Lover takes the Troll out, he looks after Squirky in the mornings before he goes to work and takes The Troll to nursery. I know a million husbands would never think to do this. I'm a lucky lady.

But I worked out that in the last 9 months I have had less than 24 complete hours where I have not had a child in attendance. It's beginning to show.

My Slimming World motivation has taken a complete tumble. I stayed on track up until 6pm and then I crumbled. I think my current plan is to have EE breakfasts and EE main meals, but have snacks and lunches as I fancy. Then get fully back on plan next week. Ha. I hope I'm not kidding myself.

Chicken, Mango and Vermicelli Noodles

The Troll's birthday was a massive success party wise. The flat was turned into a grotto, thanks to fairy lights and paper butterflies, and her birthday tea went down a treat. It wasn't such a success diet-wise. I enjoyed birthday cake and a Chinese meal in the evening when I was deemed physically incapable of cooking having spent an exhausting 2 days creating a birthday wonderland.

And the exhaustion has impeded my ability to plan meals for the next 7 days, so the Tesco order I am about to place to feed us from Saturday through to Friday mostly consists of tried and tested faves.

Tonight I am trying another recipe from 'Food from the Sun' by Neven Maguire. I have fallen in love with this book and am in danger of replicating the whole thing on this blog as every recipe appears SW friendly, so in respect to the author I repeat his recipes unless I alter them significantly to fit with the plan - you'll have to find him at the library or buy the book! Believe me it's worth looking through, the food tastes fabulous.

However, here are the ingredients I used:.
  • Tesco chicken breasts
  • 50g vermicelli noodles
  • 1 red onion
  • Mint leaves
  • Mango cut into strips
  • 10g cashew nuts (1.25 SYNS PER SERVING)
  • 1.5 tbsp soy sauce
  • 1 tbsp sweet thai chilli sauce (0.75 SYNS PER SERVING)
  • Juice of 1 lime
  • 0.5 tsp mild curry powder
  • Crushed garlic clove
  • 1 tsp caster sugar (0.5 SYNS PER SERVING)
  • Tbsp basil leaves
  • 2 tbsp extra virgin olive oil (HEALTHY B CHOICE PER SERVING)
This created a marinade for the chicken, and a dressing for the noodle and chicken salad.

Lamb Rogan Josh

Wednesday weigh in.....

Taking into account a massive 4 day blow out to celebrate my Chunky Lover's birthday, I put on a very respectable 3lbs.

Now the damage is done I have a battle of will on my hands today as I make The Trolls chocolate birthday cake without licking the bowl or eating any of the icing decorations.

When I made Chunky Lover's cake last week I found such joy and comfort in licking the spoon.

Tonight we are decorating the living room to look like a fairy den with lights and butterflies and helium balloons, and so I am preparing today's dinner early in the day so it just needs to be reheated without interrupting our redecoration plans.

I have been inspired again by 'Food from the Sun' by Neven Maguire. I only made a couple of modifications to allow it to work with the plan and again I truly recommend this book - the recipes work really well on Slimming World and the flavours are incredible.

WHAT I PUT INTO IT FOR TWO:
  • 350g lean lamb chunks
  • 400g tinned toms
  • 2 tbsp extra virgin olive oil (HEALTHY B CHOICE)
  • 3 cloves
  • Half a cinnamon stick
  • 1 bay leaf
  • 1 onion
  • small piece of grated ginger (little finger tip)
  • 2 cloves of garlic
  • 1/2 tbsp coriander
  • 1tsp cumin
  • 1tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/8tsp cardamom
  • 200g 0% greek yoghurt
  • seasoning
  • Serve with basmati and wild rice
HOW I DID IT:
  • Brown lamb in half of oil and set aside
  • Use remaining oil to briefly fry the bay, cinnamon and cloves then add onion and fry until golden
  • Add ginger and garlic for a moment and then the dry spices
  • Stir through and add yoghurt slowly, mixing between each spoon full
  • Add lamb, tomatoes and 75ml boiled water
  • Simmer, partly covered, for one hour

Prawns in Tomato and Chilli

I've spent all morning walking around the house tidying and muttering to myself. Squirky is in raptures as she watches me. She loves the sound of my voice. She clearly doesn't realise that my inane rambles are answers to mock interview I am giving to myself in preparation for the real thing this afternoon. If she did realise this then I'm sure it wouldn't be so amusing to her. I, for one, am cacking myself. (I believe that is the technical term right?).

This week is such a crazy roller coaster of high emotion. Yesterday my very best friend in the whole wide world got married. Unfortunately she lives in a different country in the whole wide world, and the world was too wide to travel across with baby and toddler and (lack of) maternity pay in my pocket.

Today I'm interviewing for a very grown up job. Trouble is I have trouble recognising myself as a grown up. Throughout my career I have been waiting to be found out. It feels like so mistake that anyone would want to employ me...little me? And here I am now looking to fool someone else into hiring me...little me.

And then we have The Troll's birthday which I have been looking forward to and planning for. But we've arrived at the critical week and my mind is flipping between transatlantic weddings and having nothing suitable to wear for an interview.

I'm shocked that despite this I have still retained control over my menu. Tonight's meal (Prawns in Tomato and Chilli) is derived from 'Neven's Food from the Sun' by Neven Maguire which I highly recommend. A huge selection of the recipes are Slimming World friendly and the images are so inspiring.

WHAT WENT INTO IT FOR TWO:
  • Tesco Large King Prawns Cooked And Peeled 250G
  • 6 large tomatoes, halved, deseeded and skinned if possible!
  • Tsp lazy chilli
  • 1 small white onion
  • 1 sweet red pointed pepper
  • Garlic clove
  • Basil
  • 2 tbsps extra virgin olive oil (HEALTHY B CHOICE)
  • 50g serrano ham (0.5 SYNS PER SERVING)
  • 12.5g plain flour (1.5 SYNS PER SERVING)
  • Sweet paprika
  • Lemon
  • Salad leaves, grapes and 4 olives (0.5 SYNS)

HOW I DID IT:
  • Blend the tomato, chilli, onion, pepper, garlic and basil into a paste
  • Fry the paste in a tablespoon of olive oil with seasoning until reduced, then add the serrano ham.
  • Move into a oven proof dish
  • Then mix the flour with the paprika and coat the prawns
  • Fry the prawns in the remaining oil until browned
  • Add them to dish on top of tomato mixture and bake for 8 minutes
I served mine with salad and my Chunky Lover's with bread.

Dill Gnocchi

Well, I certainly enjoyed the weekend. I had puff pastry steak and ale pie, a warm bread baton equalled in girth by the amount of butter I spread across it, insipid hot chocolate, hog roast roll with stuffing and apple sauce and chocolate.

It's been fun to be a fatty, now I back on course to being a thinny.

When I got married last year I had been dieting about 2 years, and got my four stone sticker the day before we married. I was religious about the diet and barely strayed from the plan for the whole two years.

Our wedding meal was the first non-Slimming World meal I had eaten in months. I was singing the praises of the gorgeous cheese that had been served with the bread whilst we waited for our main course. I was eating wedges of it. My newly-wed husband had to point out it was in fact slabs of butter I was wolfing down in my wedding finery. Oh the shame!

It seemed I dieted hard therefore I fell hard.

This time around I am being more realistic about myself and my life and it makes it much easier to cope with getting back on plan after a naughty day or two!

Tonight's dinner is inspired by a recipe in Slimming Worlds Best Ever book. I added red wine and dropped some herbs! I served my Chunky Lover's with Mediterranean bread - I was quiet envious. I have to say I'm not convinced on this one. It tasted like cheesy mashed potato on salad....

WHAT WENT INTO IT FOR TWO:
  • Potatoes
  • Dill
  • 1 beaten egg
  • nutmeg
  • Tin chopped tomatoes
  • 75ml red wine (1.5 SYNS PER SERVING)
  • Cheese (HEALTHY A OPTION)
  • Basil
  • Red onion x 2
  • Rocket leaves
  • Olives (1 SYN)
  • Cherry tomatoes
  • cucumber

HOW I DID IT:
  • Mash the potatoes with egg, nutmeg and dill
  • Leave to cool overnight
  • Heat tomatoes, red wine, one onion chopped and seasoning in a pan for 10 minutes
  • Line a dish with basil leaves and top with tomato sauce
  • Pat potatoe mix into little dumplings. Place on top of sauce and top with grated cheese.
  • Bake for ten minutes
  • Serve with salad

BREAKFAST: PUDDING RICE WITH MULLER YOGHURT; LUNCH: SYN FREE RISOTTO, BASIL, 14g CHEESE (3 SYNS); DINNER: "DILL GNOCCHI"; SNACKS: YOGHURT, 3 BANANAS, 2 ALPEN LIGHT BARS (HEALTHY B OPTION);PUDDING: FROZEN BLUEBERRIES AND 2 MULLER LIGHT YOGHURTS

Shall I Be Good? or Bad? Good? Or Bad?

Thursday was my Chunky Lover's birthday. Saturday we plan to go out for a birthday meal and on Sunday we are out at a food fete, so it's a given that these three days were off plan.

Until yesterday I also thought I may as well have the Friday off-plan too.

However I ate so much on Thursday I felt sick and whenever I woke to feed Squirky in the night (23.30, 03:00 and 05:00) I could feel food all the week to the top of my throat.

So I started Friday on plan, and breakfast and lunch adhered to Slimming World stipulations. Towards the end of the afternoon I began to hear a faint whispering. It was coming from the fridge. I opened the door just a crack and found the last slice of cheesecake calling 'Mummy Blubber....eat me!!!!!'. So I did.

And then the left over pineapple upside down cake started at it too. Damn cakes ganging up against me. So I ate a slice of that too.

After that it went tits up and I ate like a hog.

Old me would have carried on like this for the next 6 months seeing the diet as a lost cause. The new me knows that on Monday I'll be craving my Slimming World meals so yay to naughty food!
