Spicey Prawn and Chicken Chowder

I'd love to say that my 3 week blog-absence is simply down to the fact that we have not had internet access since the house move. I'd love to say that although my blog hasn't been updated I have of course stuck to plan and lost another 7lbs.

I'd love to say that.

But that would be a big fat lie. A lie almost as big and fat as my arse.

During the move and the ensuing weeks whilst everything settled back in to place (including getting broadband access) it felt as if normal rules just didn't apply. I've eaten like a pig, mostly takeaway and convenience foods and eating out. The Troll has been staying up late, and Squirky is still high on the thrill of having so much space to commando crawl across.

We've all gone a little bit doolally with happiness since we moved into our dream home.
This disregard for rules coupled with lack of internet (i.e no blog to keep my on straight and narrow, no online Tesco shop to help me plan, no Facebook support) meant Slimming World wasn't possible (in my mind).....

Astonishingly, despite not weighing in since 10th Nov and not sticking to the plan for a single day in three weeks, I have only managed to put on 1lb! Absolutely bizarre. I guess the move was body-magic-tastic and the new house has stairs, so perhaps I am just moving more generally?

My first Slimming World meal of December 2010 is a warm and filling Prawn and Chicken Chowder. Perfect for a snowy night, when all the family are bunged up with head coles. The chilli blows the cobwebs out a bit!

WHAT WENT INTO DINNER FOR TWO:
  • 1 pack of mini chicken fillets cut into cubes
  • 1 red onion chunkily sliced
  • 3 shallots
  • 3 small orange peppers chunkily sliced
  • Chilli flakes
  • 200ml white wine (3.4 SYNS PER PORTION)
  • 1 tin chopped tomatoes and garlic
  • 3 garlic cloves
  • 2 pinches saffron dissolved in water
  • 450g prawns
  • Flat leaf parsley
  • Uncle Bens express Long Grain Rice (0.5 SYNS PER SERVING)

HOW I DID IT:
  • Brown the chicken in frylight and set aside
  • Fry onions and peppers in frylight for 10 mins on a low heat
  • Add the chicken back in with the grated garlic and chilli flakes, cook for 2 mins
  • Add wine and allow to boil for 2 mins then add tomatoes and saffron
  • Bring back to the boil then simmer for 10 mins
  • Add seasoning
  • Add prawns for a few moments and serve with rice (cooked as per pack instructions) and sprinkle with parsely
BREAKFAST: PUDDING RICE, YOGHURT, BLUEBERRIES; LUNCH: BAKED POTATO, TUNA, MAYO (0.5 SYNS), CHEESE (HEALTHY A OPTION); DINNER: "PRAWN AND CHICKEN CHOWDER"; SNACKS: HAM, GRAPES, TWO YOGHURTS, 2 ALPEN LIGHT BARS (HEALTHY B CHOICE); PUDDING: BLUEBERRIES AND YOGHURT

Wednesday Weigh In (after a very naughty week)

I won't mention....

I've been very quiet because Slimming World hasn't existed for me for a number of days now.
I just haven't been in the mind frame to plan a meal, and all the kitchen stuff is packed away so nothing is at hand. I've been eating takeaways and left overs.

The weird thing is that whilst I diet I fantasise about fish and chips or pizza, but in reality whilst they taste fatty and good they don't give me "end of day food closure". There's actually a great satisfaction in preparing a meal and savouring it, knowing it's healthy and you did it yourself.

Yesterday I spent a great proportion of the day eating tablespoons of vanilla ice-cream straight from the tub. I felt too sickly to eat a proper meal, and yet never quite full.

Three things need to happen before I sit down and plan again and cook in our fantastic new kitchen: 1) We move into the new house (Friday), 2) We unpack, 3) We get the internet back (boo- bye bye Facebook whilst we get our phone line transferred)

I still weighed in today. I expected the worst and in fact I have only put on 1lb, so all is not lost.

Chicken with Red Pesto and Veg

I was kind of hiding from my blog yesterday. The house move/tiredness related binge continued with much gusto. I finished off The Troll's Halloween hoard (she hasn't noticed yet), I ate two sausages rolls for lunch and had about 8 slices of toast and then....and then....a pizza :(

It was lovely at the time, but at 2am and 4am when Squirky woke for her feeds it was not so good. The indigestion was unreal. It would seem that pepperoni just before bed is not a good idea.

Today I was going to do my best to stick to plan for the rest of the week until we move into the new place on Friday. I had planned my meals up until then and Tesco did their delivery this morning.

I'm also on 'Operation-Empty-The-Freezer' so the meals are pretty much based around remnants in our over iced freezer box.

I tried to stick to plan. But I failed.

WHAT WENT INTO DINNER FOR TWO:
  • 2 Chicken breasts
  • Red Pesto (see link for recipe) (5 SYNS PER PORTION)
  • Asparagus
  • Roasted potatoes

HOW I DID IT:
  • Cubed potatoes and cooked as per Slimming World chips
  • Roasted chicken breasts for 25 mins. Coated with pesto 15 minutes before completely cooked
  • Boiled asparagus for 3 minutes
(I ended up doing the potatoes in lashings of Olive Oil - so a bug fat diet fail on this meal)

BREAKFAST: YOGHURT, 3 CUPS OF TEA WITH DASHES OF MILK (1.5 SYNS); LUNCH: PASTA, CHEESE (HEALTHY A OPTION);DINNER: "CHICKEN WITH RED PESTO AND VEG"; SNACKS: 6 CHOCOLATE DIGESTIVES, 2 ALPEN LIGHT BARS (HEALTHY B CHOICE), GARLIC BREAD, COKE; PUDDING: BELGIAN WAFFLE AND ICE CREAM

Oops I Did it Again

Can someone please tell my baby that 3.30am is not an appropriate time to start the day.
I have tried explaining this to her but she doesn't seem to understand. Or perhaps she just doesn't care.

These early starts are robbing me of my creativity and will power. I stuck to plan until about 5pm when my body began aching for some serious sugar. Then it all went mental. I ate three fingers of Twirl in a row and that was just that start.....

Red Pesto Pasta

Wednesday weigh in......I lost 1lb. Even after the Halloween gorge-fest! I'm very pleased and relieved.

We began moving boxes to our new house today. We starting with everything that can go straight into the loft for storage. I was up and down stairs, lifting, transferring, and climbing ladders so I'm looking at this as extreme body magic.

I'd better lose more than a pound next week! Especially since I'll be having 4 days or so off plan whilst we actually move.....I'mm sure to put on a pound or two then.


WHAT WENT INTO DINNER FOR FOUR SERVINGS (I AM PUTTING THREE SERVINGS IN THE FRIDGE FOR LATER USE):
  • 400g tinned tomatoes
  • 4tsp lazy garlic
  • 2tsp lazy chilli
  • 180g drained sun dried tomatoes (5 SYNS PER PORTION)
  • Basil
  • Cheese (HEALTHY A OPTION)
  • Pasta
HOW I DID IT:
  • Make pasta as per pack instructions
  • Blend the tomatoes, garlic and chilli
  • Mix a quarter of the pesto through the pasta (save rest for further servings in the week)
  • Top with basil and cheese

Sausage, Egg, Chips and Spaghetti Hoops

We picked up the keys to the new house today. This is so awesome it almost makes me cry. We move in less than two weeks and have been allowed to start dropping boxes over to the new place in anticipation.

We'll feel sad saying goodbye to this flat. It's where The Troll and Squirky came home to after being born. We were engaged and married whilst living here, so the foundation of our lives was set in what we have come to lovingly refer to as our 'Shitty Little Flat'.

Now we are moving into a grown up house. We'll have new milestones to look forward too. The girls starting school. Big anniversaries. Me being skinny? Maybe.

Syn Free Sun Dried Tomato Risotto

Today I went back to work for the first time after over 10 months of maternity leave. I knew that when I got to this point I would find dieting difficult as it would mean extra preparation in the evenings and early mornings, and trying to resist the office pickings in order to stick to the Slimming World plan.

However, the odd thing was today was actually surprisingly easy. I made a quick bowl of pasta for my lunch and stuck some bananas in my bag. I had no problem saying no to the donuts and choccie bars I was offered and had a diet coke when I went with the girls for 'a coffee'. It was easy, but I'm only working one day this week. The real test will come when I'm full time again after Christmas. Will I still have the energy or the even the will power to think of new meals and cook them in the evening? Will I get up early enough every day to get the girls ready and make myself lunch and breakfast?

I really really hope so. I'm sick of being so fat.


WHAT WENT INTO DINNER FOR ONE:
  • 1 pack of Gallo Pronto Risotto - sun dried tomato flavour
  • Basil leaves
  • Cheese (HEALTHY A CHOICE)
HOW I DID IT:
  • Make risotto as per pack
  • Top with cheese and basil
